Make a Tape
Cassava
Cassava is well known everywhere, cheap, delicious, and
fun. The well-known tape is Tape (peuyeum)
Bandung. Many people
like Penyum Bandung, because the sweet
taste and not
watery. You can also make your own tape,
because it is not difficult. The ingredients are:
cassava old 2
kg, a sweet yeast
tape (can be purchased at the grocery store cake / traditional markets).
While the necessary tools: knife, a pot
for steaming plus lid, stove, nyiru (in Bahasa)
/ Tampah bamboo,
mortar to make yeast a sands, banana leaves and
bamboo baskets.
The first step is strip the cassava, then wash it, cut into pieces or left intact. After that, boil it in a pan until half cooked. Then cassava is removed and laid out / aired on nyiru until cool. Make sands of yeast, cassava flour smeared with yeast one by one until well combine, then placed in a basket, which is covered with bamboo / leaf bananas completely, they will fill up baskets full. After a basket full cover, tightly with banana leaves and adds the cloth tightly tied as the top cover of the basket. Finally, keep in a cool / dark for 3 days. Enjoy.

I love tape casava like a die. I want to back to Indonesia but I still want to stay longer here in KU. Good writing and nice picture, I mean delicious... bon a petit!!

It looks delisious.After reading about this I have the intention to visit indonisia just to try the great indo cousine.I can tell that you are such a great cook and I hope that we will taste this great recipe from your hand.
ReplyDeleteI didn't know about this food until I read your blog. I was surprised it need 3 days to keep in dark and cool place. It seems hard to make, but it must be delicious!! I remembered curry after I have read your blog. Curry rice also becomes delicious if it was kept for long time. I became want to eat Japanese curry rice^^
ReplyDeleteI guess, tape cassava is a cake from heaven, I feel "fresh" sensation, fresh taste..its different than any other cake...its very pure and natural..try it and feel it:)
